I mean maybe I’m wrong here, I’m probably wrong, but 99% of people don’t know nor care about the difference between an EV certificate and a Will Issue certificate like Let’s Encrypt.

Is it really worth revoking these over tiny discrepancies, especially in cases where you can still determine the entity beyond a doubt?

Yes, because revoking over tiny discrepancies is the difference between the two. If the EV certificate can have any old crap on it, it's no different than any other type.
